ingredients

1 can of pumpkin (great source of iron, which is unique for veggies)
1-2 Tbsp of curry powder (to taste)
1 can of coconut milk (great source of fiber)
1 can of chickpeas (rinsed)
Optional Toppings: cinnamon, lime, cilantro

Steps

Heat non-stick pan over stove on low heat.
Add all ingredients to pan.
Simmer until mixture is bubbling, continuously stirring.
Mix apples, chicken, sweet potatoes, brussel sprouts and olive oil in a large bowl.
Heat thoroughly and make sure all curry powder and cinnamon is evenly dispersed.
Serve and enjoy!
