ingredients

2 chicken breasts
4 Tbsp balsamic vinegar
3 apples, sliced (great source of fiber)
4 Tbsp olive oil
2 sweet potatoes, chopped (great source of potassium)
6 Tbsp crumbled goat cheese
2 cups brussels sprouts (great source of fiber)

Steps

Empty sheet pan
Set oven to 400°.
Line sheet pan with foil or parchment paper.
Slice bottoms off brussels sprouts.
Mix apples, chicken, sweet potatoes, brussel sprouts and olive oil in a large bowl.
Mix apples, chicken, sweet potatoes, brussel sprouts and olive oil in a large bowl.
Stir in balsamic vinegar.
Spread mixture evenly across the lined sheet pan.
Bake in oven for 25 minutes or until chicken reaches 165°.
Sprinkle crumbled goat cheese on top and enjoy.
