ingredients

3-4 chicken thighs (skin on)
4 Tbsp Olive Oil
1 ½-2 lbs potatoes, cut
Optional: 1 Tbsp of paprika or cayenne
1 bunch (½ - 1 lb) fresh asparagus, sliced (great source of Vitamin A, folate & fiber)
Salt & pepper (to taste)
BBQ Sauce

Foil or parchment paper
Stirring spoon
Sheet pan
Large bowl
Knife
Measuring spoons
Cutting board

Steps

Empty sheet pan
Set oven to 425°.
Line sheet pan with foil or parchment paper.
Toss potatoes with 2 Tbsp olive oil and desired spices in a large bowl.
Spread potatoes out in an even layer on the lined sheet pan and bake in oven for 20 minutes.
Remove sheet pan from oven and add chicken (skin side up), remaining olive oil and spices.
Bake for 15 minutes.
Remove sheet pan and add asparagus.
Coat chicken with barbecue sauce.
Bake for 15 minutes or until chicken reaches 165°.
Serve and enjoy!
