2 eggs
1 bag frozen veggie blend of your choice
1 bag frozen cauliflower rice
Optional Toppings:
low sodium soy sauce, hot sauce, lime

Steps

Frozen vegetables in a non-stick pan ready to be fried
Saute veggies and cauliflower rice in a non-stick pan over the stove until soft.
Stir in eggs until blended.
Sauted vegetables with three raw eggs cracks on top in a non-stick pan
Cooked eggs and vegetables in a non-stick pan
Continue to stir regularly until eggs are completely cooked.
Serve with soy sauce or hot sauce and enjoy!
