7 eggs, beaten (great source of protein)
½ cup fresh mozzarella, sliced
¼ cup basil, thinly sliced
1 ½ cups thinly sliced red onion
Salt & pepper (to taste)
2 Tbsp extra virgin olive oil
Non-stick baking pan
Set oven to 375°.
Combine eggs, tomatoes and onion in a non-stick baking pan.
Bake in oven for 5 minutes.
Remove dish from oven and place mozzarella slices on top.
Bake until eggs are browned.
Top with basil, serve and enjoy!
