1 ¼ lbs raw shrimp
1 tsp cumin
3 bell peppers, sliced
½ tsp paprika
1-2 onions, sliced
Salt & pepper (to taste)
Corn tortillas
1-2 Tbsp olive oil
1 Tbsp chipotle chili powder
Optional Toppings: avocado, salsa, cheese, cilantro

Steps

Empty sheet pan with parchment paper
Set oven to 450°.
Line sheet pan with foil or parchment paper.
Mix shrimp, peppers, onions, chili powder, cumin and paprika in a large bowl.
Stir in olive oil, salt and pepper.
Spread mixture evenly across the lined sheet pan.
Bake in oven for 8-10 minutes.
Optional: Remove shrimp and broil the remaining ingredients on high for an additional 2-4 minutes.
Serve on corn tortillas with any toppings of your choice! We recommend avocado, salsa, cheese and cilantro.
