1-1 ½ lbs salmon fillet, quartered
1 Tbsp olive oil
1 lb potatoes, chopped
2 tsp chili powder
2 red peppers, sliced
½ tsp garlic powder
1 Lime, quartered
Salt & pepper (to taste)

Steps

Empty sheet pan
Set oven to 425°.
Line sheet pan with foil or parchment paper.
Toss potatoes, olive oil, salt and pepper together in a large bowl.

Spread potatoes out in an even layer on sheet pan and bake in oven for 15 minutes.
Mix chili powder, garlic powder, lime juice and salt together in a large bowl.
Add red peppers and salmon to the bowl and gently mix until fish is coated.

Add peppers and salmon to sheet pan and bake for 8-10 minutes or until salmon is flakey.
Serve with lime wedges and enjoy!
